Chocolate Spritz Cookies

Instructions
- Preheat the oven to 350°F and line two sheet pans with parchment paper.
- Beat the butter and sugar in a mixer until light and fluffy.
- Add the egg, vanilla, flour, cocoa powder, and salt, and mix until just combined.
- Fill the cookie press with the dough and press cookies onto the prepared sheets.
- Bake for 5-7 minutes until just set, then cool for 5 minutes before transferring to a wire rack to cool completely.
- Melt the candy melts in the microwave, stirring until smooth.
- Dip the cookies halfway into the melted chocolate and decorate with sprinkles.
- Let the cookies dry completely before serving or storing in an airtight container.
