Cream Cheese Spritz Cookies

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment or a non-stick baking mat.
- In a mixer, beat together the butter, cream cheese, and sugar until smooth.
- Add the egg yolk and vanilla, mixing until combined.
- Gradually add the flour and mix until just blended.
- If desired, divide the dough in half and color half green.
- Shape a portion of the dough into a log and place it in the cookie press.
- Spritz the cookies onto the baking sheet, spacing them about 1 inch apart.
- Bake for 10-12 minutes until set and lightly golden on the edges.
- Cool the cookies on the pan for 5 minutes before transferring to a cooling rack.
- Melt the chocolate candy melts in the microwave, stirring until smooth.
- Dip the cookies halfway into the melted chocolate and decorate with sprinkles.
- Allow the cookies to dry completely before serving or storing.
