Paleo Spinach Cake

Instructions
- Wilt spinach in a covered saucepan over low heat without adding water.
- Drain and cool the spinach, then squeeze out excess moisture.
- Place the spinach in a food processor and pulse until coarsely blended, then set aside.
- In a 9-inch cast iron skillet, warm the oil and sauté the pine nuts until golden brown.
- Add minced garlic to the pan and sauté for an additional minute.
- Add currants to the pan and sauté for another minute.
- In a large bowl, combine the pine nuts mixture, blended spinach, whisked eggs, and salt.
- Spread the mixture into a greased 7 x 11 inch baking dish.
- Bake at 350°F for 30-40 minutes.
- Serve.
