Paleo Spinach Cake

Ingredients

  • pounds spinach
  • 3 tablespoons grapeseed oil or olive oil
  • 1 cup pine nuts
  • 2 cloves garlic
  • ½ cup currants
  • 2 large eggs
  • 1 teaspoon celtic sea salt

Instructions

  1. Wilt spinach in a covered saucepan over low heat without adding water.
  2. Drain and cool the spinach, then squeeze out excess moisture.
  3. Place the spinach in a food processor and pulse until coarsely blended, then set aside.
  4. In a 9-inch cast iron skillet, warm the oil and sauté the pine nuts until golden brown.
  5. Add minced garlic to the pan and sauté for an additional minute.
  6. Add currants to the pan and sauté for another minute.
  7. In a large bowl, combine the pine nuts mixture, blended spinach, whisked eggs, and salt.
  8. Spread the mixture into a greased 7 x 11 inch baking dish.
  9. Bake at 350°F for 30-40 minutes.
  10. Serve.
