Paleo Spinach Salad

Ingredients

The salad

  • 5 cups baby spinach
  • 1 whole apple, cut into 2 inch matchsticks
  • ΒΌ cup currants
  • 1 cup walnuts

The dressing

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Instructions

  1. In a large bowl, combine spinach, apple, and currants.
  2. Toast the walnuts in a 9 inch cast iron skillet over medium-low heat until browned, about 10 minutes.
  3. Add the warm walnuts to the salad.
  4. Drizzle olive oil and balsamic vinegar over the salad.
  5. Toss the salad and serve.
