Chicken Alfredo Baked Ziti

Ingredients

The pasta

  • 12 ounces uncooked ziti

The chicken

  • 2 cups shredded, cooked chicken

The cheese

  • cups shredded part-skim mozzarella cheese
  • ¾ cup freshly-grated Parmesan cheese

The sauce

  • 1 tablespoon olive oil or butter
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 cup chicken or vegetable stock
  • 1 cup low-fat milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Toppings

  • to taste freshly-grated Parmesan cheese
  • to taste finely-chopped fresh basil or parsley

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish.
  2. Cook the pasta until al dente, then drain and return to the pot.
  3. Add shredded chicken and alfredo sauce to the pasta and mix well.
  4. Layer half of the pasta mixture in the baking dish and sprinkle with 1 cup of mozzarella.
  5. Add the remaining pasta mixture and top with the remaining ½ cup of mozzarella.
  6. Bake for 20-25 minutes until the cheese is melted and golden.
  7. Serve hot, garnished with additional toppings if desired.
