Ingredients

  • 6 slices bacon, diced
  • cup onion, finely diced
  • 4 cups corn kernels

  • 2 tablespoons chives, sliced

Instructions

  1. Cook the bacon in a skillet over medium-high heat until crispy.
  2. Remove the bacon and drain on paper towels.
  3. Drain excess grease from the pan, leaving about 1 tablespoon.
  4. Add the onion to the pan and cook until translucent.
  5. Stir in the corn, sugar, salt, and pepper, cooking until the corn caramelizes.
  6. Return the bacon to the pan, mix well, and top with chives before serving.
