Instructions
- Preheat the oven to 400ºF.
- Wash and quarter the apple, removing the core, then shred it using a grater.
- In a medium bowl, whisk together the egg, apple sauce, lemon juice, sugar, and shredded apple.
- In a large bowl, mix the flour, salt, baking powder, cinnamon, and ginger.
- Cut in the cold butter until the mixture resembles coarse sand.
- Combine the wet and dry ingredients until a dough forms.
- Turn the dough onto a floured surface and shape it into a disc, then cut into eight wedges.
- Place the scones on a parchment-lined baking sheet and bake for 18-20 minutes until golden brown.
- Allow the scones to cool completely.
- For the glaze, mix powdered sugar, cinnamon, and water until smooth, then drizzle over the cooled scones.
