Ingredients

The scones

  • 1 large egg
  • ¼ cup unsweetened apple sauce
  • 1 tsp lemon juice
  • 1 Tbsp sugar
  • 1 medium apple
  • 2 cups all-purpose flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • 5 Tbsp cold butter

Cinnamon glaze (optional)

  • ½ cup powdered sugar
  • ½ tsp cinnamon
  • 2 tsp water

Instructions

  1. Preheat the oven to 400ºF.
  2. Wash and quarter the apple, removing the core, then shred it using a grater.
  3. In a medium bowl, whisk together the egg, apple sauce, lemon juice, sugar, and shredded apple.
  4. In a large bowl, mix the flour, salt, baking powder, cinnamon, and ginger.
  5. Cut in the cold butter until the mixture resembles coarse sand.
  6. Combine the wet and dry ingredients until a dough forms.
  7. Turn the dough onto a floured surface and shape it into a disc, then cut into eight wedges.
  8. Place the scones on a parchment-lined baking sheet and bake for 18-20 minutes until golden brown.
  9. Allow the scones to cool completely.
  10. For the glaze, mix powdered sugar, cinnamon, and water until smooth, then drizzle over the cooled scones.
