Instructions
- Preheat the oven to 400°F and prepare a baking sheet with nonstick spray.
- Cut the bottom end of the cabbage and slice it into ¾ to 1-inch thick slices.
- Brush the olive oil, garlic, salt, and pepper mixture on both sides of the cabbage slices.
- Roast the cabbage for 26 to 28 minutes, rotating the pan halfway through.
- Toast the pecans on a separate baking sheet in the oven for about 8 minutes.
- Sprinkle the roasted cabbage with Parmesan, fresh herbs, and lemon juice, and top with chopped pecans before serving.
