Ingredients

The cabbage

  • 1 small head green cabbage

The seasoning

  • ¼ cup extra virgin olive oil
  • 2 cloves garlic
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Optional toppings

  • cup raw pecan halves or walnut halves
  • 1 small lemon
  • to taste grated Parmesan
  • to taste chopped fresh herbs (such as thyme or parsley)

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with nonstick spray.
  2. Cut the bottom end of the cabbage and slice it into ¾ to 1-inch thick slices.
  3. Brush the olive oil, garlic, salt, and pepper mixture on both sides of the cabbage slices.
  4. Roast the cabbage for 26 to 28 minutes, rotating the pan halfway through.
  5. Toast the pecans on a separate baking sheet in the oven for about 8 minutes.
  6. Sprinkle the roasted cabbage with Parmesan, fresh herbs, and lemon juice, and top with chopped pecans before serving.
