Ingredients

The cabbage steaks

  • 2 small cabbages cabbages
  • 4 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon granulated garlic
  • ½ teaspoon Aleppo chili flakes
  • zest from 1 lemon lemon zest
  • ¼ cup parmesan (optional)
  • to taste Italian parsley

The sauce

  • 1 Pickled Pepper Vinaigrette or Gremolata (pick one)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the stem end off the cabbage, then slice into 1-inch thick slices.
  3. Place the cabbage slices on a parchment-lined sheet pan, prettiest side down.
  4. Brush both sides with olive oil and season with salt, pepper, smoked paprika, garlic, and chili flakes. Sprinkle with lemon zest.
  5. Roast for about 20 minutes, adding parmesan at 15 minutes if desired, until tender.
  6. While the cabbage is roasting, prepare the sauce.
  7. Serve the cabbage steaks over creamy polenta, topped with fresh parsley and sauce.
