Instructions
- Preheat the oven to 400°F.
- Cut the stem end off the cabbage and slice into 1-inch slices.
- Place the cabbage on a parchment-lined sheet pan with the prettier side down.
- Brush with olive oil and sprinkle with salt, pepper, smoked paprika, garlic, and chili flakes on both sides.
- Sprinkle with lemon zest and save any leftover oil.
- Roast for 20 minutes, adding parmesan at minute 15 if desired.
- Check for doneness and continue baking until fork-tender.
- Prepare the sauce and side dish while the cabbage roasts.
- Assemble by placing the side in a bowl, topping with cabbage, brushing with olive oil, adding parsley, and spooning the sauce over.
