Brat-Style Pork Burgers

Ingredients

The patties

  • 2 teaspoons canola oil
  • 1 small onion, sliced
  • 1 pinch salt
  • 2 cloves garlic
  • 1 pound boneless pork chops, cut into large chunks
  • ½ teaspoon sugar, preferably granulated raw (optional)
  • ¼ teaspoon sage
  • ¼ teaspoon caraway, crushed
  • ¼ teaspoon celery seed
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon marjoram
  • teaspoon allspice
  • 1 pinch cayenne
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon salt

The assembly

  • 4 whole grain hamburger buns, toasted
  • to taste your favorite mustard
  • to taste sauerkraut, drained

Instructions

  1. Heat oil in a large sauté pan over medium heat and add the onions, cooking until caramelized.
  2. Mince garlic and combine with pork and spices in a food processor, processing until just ground.
  3. Shape the mixture into 4 patties.
  4. Preheat the grill on medium heat and lightly oil the grate.
  5. Cook the patties for about 4 minutes on one side, then flip and cook for an additional 3-4 minutes until cooked through.
  6. Let the patties rest for 3 minutes before serving.
  7. Assemble the burgers on buns with mustard and sauerkraut.
