Ingredients

The pork spice blend

  • ½ teaspoon garlic powder
  • ½ teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon paprika
  • to taste salt and freshly ground black pepper

The pork burgers

  • 2 pounds ground pork
  • 4 ounces feta cheese
  • 3 tablespoons mayonnaise
  • 3 tablespoons whole grain mustard
  • 1 jar (16-ounce) pickled beets
  • 6 brioche buns or other burger buns
  • ¼ cup butter, softened

Instructions

  1. Combine garlic powder, coriander, fennel, paprika, salt, and pepper in a large bowl.
  2. Add ground pork and mix gently until evenly distributed, then form into 6 patties.
  3. Preheat a skillet or grill over medium-high heat and cook patties for 3 to 5 minutes per side until they reach 160°F.
  4. While cooking, mix feta cheese, mayonnaise, and mustard in a small bowl.
  5. Drain 2 to 3 pickled beet slices per burger.
  6. Transfer cooked burgers to a plate and keep warm under foil.
  7. Toast the cut sides of the buns with butter until golden brown.
  8. Assemble the burgers by spreading feta mustard on the bottom of each bun, topping with a burger and pickled beet slices.
