Ingredients

The base

  • 3 cups old fashioned oats
  • 1 cup lightly salted peanuts
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon

The wet ingredients

  • 2 tablespoons coconut oil
  • cup natural creamy peanut butter
  • cup honey
  • 1 teaspoon vanilla extract
  • 1 large ripe banana (mashed, about ½ cup)

Instructions

  1. Preheat the oven to 325°F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix the oats, peanuts, salt, and cinnamon.
  3. Melt the coconut oil in a saucepan over medium heat, then add the peanut butter and honey, stirring until combined.
  4. Remove from heat and whisk in the vanilla and mashed banana until smooth.
  5. Pour the wet mixture over the oat mixture and stir until the oats are well coated.
  6. Spread the mixture evenly on the prepared baking sheet.
  7. Bake for 25-30 minutes, stirring occasionally, until golden brown.
  8. Let the granola cool completely on the baking sheet before storing in an airtight container.
