Peanut Butter Banana Granola

Instructions
- Preheat the oven to 325°F and line a large baking sheet with parchment paper.
- In a large bowl, mix the oats, peanuts, salt, and cinnamon.
- Melt the coconut oil in a saucepan over medium heat, then add the peanut butter and honey, stirring until combined.
- Remove from heat and whisk in the vanilla and mashed banana until smooth.
- Pour the wet mixture over the oat mixture and stir until the oats are well coated.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 25-30 minutes, stirring occasionally, until golden brown.
- Let the granola cool completely on the baking sheet before storing in an airtight container.
