Peanut Butter Granola

The granola base

The wet mixture

Instructions
- Preheat the oven to 275 degrees.
- In a large bowl, mix the rolled oats, brown rice crisp cereal, coconut, and nuts.
- In a small bowl, combine the maple syrup, coconut oil, peanut butter, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir to coat evenly.
- Transfer the mixture to a 9x13 inch baking dish and press down evenly.
- Bake for about an hour, or until the granola begins to brown.
- Allow the granola to cool completely on a rack before removing it from the pan.
- Stir in the chopped dried apricots and store in an airtight container.
