Ingredients

The granola

  • 4 cups old-fashioned oats
  • 1 cup peanuts
  • Zest of 2 lemons

The coating

  • ¾ cup natural peanut butter
  • ½ cup real maple syrup
  • cup extra virgin olive oil
  • ¼ teaspoon fine grain sea salt
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (165°C) with the rack in the top third.
  2. Combine the oats and peanuts in a large bowl and line a baking sheet with parchment paper.
  3. In a medium saucepan, mix the lemon zest, peanut butter, maple syrup, olive oil, and salt over low heat until creamy.
  4. Remove from heat and stir in the vanilla extract, adjusting salt to taste.
  5. Pour the peanut butter mixture over the oat mixture and stir until well coated.
  6. Transfer to the prepared baking sheet, flatten with a spatula, and bake for 25 minutes until golden at the edges.
  7. Stir the granola, flatten it back, and continue baking for another 10 minutes until golden all over.
  8. Allow to cool completely in the pan before serving.
