Peanut Butter Granola

Instructions
- Preheat the oven to 325°F (165°C) with the rack in the top third.
- Combine the oats and peanuts in a large bowl and line a baking sheet with parchment paper.
- In a medium saucepan, mix the lemon zest, peanut butter, maple syrup, olive oil, and salt over low heat until creamy.
- Remove from heat and stir in the vanilla extract, adjusting salt to taste.
- Pour the peanut butter mixture over the oat mixture and stir until well coated.
- Transfer to the prepared baking sheet, flatten with a spatula, and bake for 25 minutes until golden at the edges.
- Stir the granola, flatten it back, and continue baking for another 10 minutes until golden all over.
- Allow to cool completely in the pan before serving.
