Ingredients

The pork chops

  • 4 pieces boneless pork chops, fat trimmed

The coating

  • 2 Tbsp Dijon mustard
  • ½ cup whole wheat Panko breadcrumbs
  • 1 Tbsp fresh thyme, chopped
  • 1 Tbsp fresh parsley, minced
  • tsp sea salt
  • tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat the oven to 450°F.
  2. Rub the mustard evenly over the pork chops.
  3. In a large bowl, combine the panko, thyme, parsley, salt, and pepper, then dredge the pork chops in the mixture.
  4. Heat a large ovenproof skillet over medium-high heat and add the olive oil.
  5. Add the pork chops to the skillet and sauté for 2 minutes until golden brown.
  6. Turn the pork chops over and place the skillet in the oven for about 8 minutes, or until the pork reaches 145°F in the center.
