Ingredients

The pork chops

  • 1 ¼ pound boneless pork chops
  • to taste salt
  • to taste pepper

The crust

  • ½ cup grated Parmesan cheese
  • ½ cup crushed pork rinds
  • 1 tablespoon minced fresh parsley
  • ½ teaspoon minced fresh garlic
  • ½ teaspoon lemon zest

The egg wash

  • 1 large egg
  • 2 teaspoon water

For cooking

  • 2 tablespoon avocado oil or olive oil

Instructions

  1. Let the pork chops come to room temperature for 20-30 minutes.
  2. Pat the pork dry and season with salt and pepper.
  3. In a shallow bowl, beat the egg with water for the egg wash.
  4. On a plate, combine the Parmesan cheese, crushed pork rinds, minced garlic, parsley, and lemon zest.
  5. Heat a large frying pan over medium heat and add oil.
  6. Coat each pork chop in the egg wash, then dredge in the Parmesan mixture until fully coated.
  7. Place the coated pork chops in the hot pan and cook for about 3 minutes per side.
  8. Check the internal temperature, aiming for 140°F before resting.
  9. Remove the pork chops from the pan and let them rest for 10 minutes before serving.
