Ingredients

The pork chops

  • 1 ¼ pound boneless pork chops
  • to taste salt and pepper

The crust

  • ½ cup grated Parmesan cheese
  • ½ cup crushed pork rinds
  • 1 tablespoon minced fresh parsley
  • ½ teaspoon minced fresh garlic
  • ½ teaspoon lemon zest

The egg wash

  • 1 large egg, beaten
  • 2 teaspoon water

The oil

  • 2 tablespoon avocado oil or olive oil

Instructions

  1. Let the pork chops come to room temperature for 20-30 minutes.
  2. Pat the pork dry and season with salt and pepper.
  3. In a shallow bowl, beat the egg with water.
  4. On a plate, combine Parmesan cheese, crushed pork rinds, garlic, parsley, and lemon zest.
  5. Coat each pork chop in the egg wash, then dredge in the Parmesan mixture.
  6. Heat oil in a frying pan over medium heat.
  7. Add the coated pork chops to the pan and cook for about 3 minutes on each side until golden brown.
  8. Check the internal temperature; it should reach 140°F.
  9. Remove from the pan and let rest for 10 minutes before serving.
