Ingredients

The crust

  • 14 pieces whole-grain crackers
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

The pork

  • 3 tablespoons olive oil
  • 4 pieces boneless pork chops (about ¾” thick)

Optional garnish

  • to taste parmesan cheese (freshly grated)
  • to taste honey mustard sauce

Instructions

  1. 1. Pulse the crackers and spices in a food processor until crumbly, then spread the mixture on a plate.
  2. 2. Coat both sides of the pork chops with 2 tablespoons of olive oil.
  3. 3. Press the pork chops into the cracker mixture until well coated.
  4. 4. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  5. 5. Cook the pork chops for about 3 to 4 minutes on each side until golden brown and no longer pink.
  6. 6. Optionally, top with parmesan cheese and serve with honey mustard sauce.
