Crispy Pork with a Cracker Crust

The pork

boneless pork chops (about ¾” thick)

Instructions
- 1. Pulse the crackers and spices in a food processor until crumbly, then spread the mixture on a plate.
- 2. Coat both sides of the pork chops with 2 tablespoons of olive oil.
- 3. Press the pork chops into the cracker mixture until well coated.
- 4. Heat 1 tablespoon of olive oil in a skillet over medium heat.
- 5. Cook the pork chops for about 3 to 4 minutes on each side until golden brown and no longer pink.
- 6. Optionally, top with parmesan cheese and serve with honey mustard sauce.
