Spiced Pumpkin Seed Granola

Ingredients

  • 1 cup raw pumpkin seeds
  • cup raw sunflower seeds
  • ¼ cup raw sesame seeds
  • 2 Tablespoons flax seeds
  • ½ teaspoon cinnamon
  • 1 teaspoon pumpkin spice
  • ¼ teaspoon sea salt
  • ¼ cup maple syrup
  • ⅓ to ½ cup unsweetened coconut

Instructions

  1. Preheat the oven to 325°F.
  2. Line a baking sheet with parchment paper.
  3. Combine all ingredients except coconut in a mixing bowl and stir well.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Bake for 20 minutes, then add coconut and mix.
  6. Return to the oven for an additional 5-7 minutes to toast the coconut.
  7. Remove from the oven and let cool completely before breaking into pieces.
