Ingredients

  • ½ cup pumpkin seeds
  • 1 cup shredded unsweetened coconut
  • 3 tablespoons chia seeds
  • ¼ cup sunflower seeds
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup pure maple syrup

Instructions

  1. Preheat the oven to 300°F and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the pumpkin seeds, shredded coconut, chia seeds, sunflower seeds, cinnamon, and salt, and mix well.
  3. Add the maple syrup to the mixture and stir until all ingredients are coated.
  4. Transfer the mixture to the prepared baking sheet and spread it into an even layer.
  5. Bake for 25 minutes or until lightly golden.
  6. Allow the granola to cool completely, then break it into pieces and store in an airtight container.
