Sautéed Kale with Garlic and White Beans

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • ¼ teaspoon crushed red pepper flakes
  • 1 large bunch kale
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 ½ cups cooked white beans
  • 1 lemon juiced
  • 3 tablespoons toasted pine nuts

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and crushed red pepper, stirring for 1 minute.
  3. Add kale, salt, and pepper, cooking until wilted for about 4 minutes.
  4. Add white beans and cook for an additional 2 minutes until heated through.
  5. Stir in lemon juice and top with pine nuts before serving warm.
