Garlic Lovers Salmon In Foil

Ingredients

The salmon

  • 2 pound side of salmon, boneless and skinless

The sauce

  • 4 tablespoons butter
  • 8 cloves garlic, peeled and roughly chopped
  • ¼ cup dry white wine
  • 2 tablespoons freshly-squeezed lemon juice
  • salt to taste
  • pepper to taste

The garnish

  • ¼ cup chopped fresh Italian parsley
  • ¼ cup thinly-sliced green onions

Instructions

  1. Preheat the oven to 375°F or heat the grill to medium.
  2. Line a large baking dish with aluminum foil.
  3. Melt the butter in a saucepan over medium-high heat and stir in the garlic, cooking until fragrant.
  4. Remove from heat and mix in the white wine and lemon juice.
  5. Brush some of the butter mixture on the foil and place the salmon on top.
  6. Pour the remaining butter-garlic mixture over the salmon and season with salt and pepper.
  7. Fold the foil to create a sealed packet around the salmon.
  8. For oven cooking, bake for 14-15 minutes, then broil for 3-4 minutes until golden.
  9. For grilling, cook for 12-14 minutes, then open the foil and grill for an additional 3-4 minutes.
  10. Remove from heat, sprinkle with parsley and green onions, and serve.
