Instructions
- Bloom the yeast by stirring warm water and inulin together, then adding the yeast and letting it sit for 10 minutes.
- In a food processor, combine almond flour, baking powder, and egg.
- Once the yeast is puffy, add it to the food processor and pulse until uniform.
- Melt the mozzarella and cream cheese together in a bowl until smooth, then add to the food processor and mix until a dough forms.
- Chill the dough in the fridge for 15-20 minutes.
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Form the dough into 8 balls and place them on the baking sheet, spaced apart.
- Sprinkle with sesame seeds if desired and press them in lightly.
- Bake for 10-15 minutes until golden brown.
