Ingredients

The dough

  • 1 packet Active dry yeast (2 1/4 tsp)
  • ¼ cup Water (lukewarm)
  • 1 tsp Inulin powder
  • ¾ cup Almond flour
  • ½ tbsp Baking powder
  • 1 large Egg (beaten)
  • cups Mozzarella cheese (shredded)
  • 1 oz Cream cheese (cubed)

Toppings

  • to taste Sesame seeds (optional)

Instructions

  1. Bloom the yeast by stirring warm water and inulin together, then adding the yeast and letting it sit for 10 minutes.
  2. In a food processor, combine almond flour, baking powder, and egg.
  3. Once the yeast is puffy, add it to the food processor and pulse until uniform.
  4. Melt the mozzarella and cream cheese together in a bowl until smooth, then add to the food processor and mix until a dough forms.
  5. Chill the dough in the fridge for 15-20 minutes.
  6. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  7. Form the dough into 8 balls and place them on the baking sheet, spaced apart.
  8. Sprinkle with sesame seeds if desired and press them in lightly.
  9. Bake for 10-15 minutes until golden brown.
