Easy Low Carb Rolls (Keto)

whey protein powder (or coconut flour or oat fiber or ¼ cup more almond flour)

baking soda (or 1 tablespoon baking powder)
Instructions
- Melt mozzarella and cream cheese in a microwave-safe bowl for 1 minute, then stir and heat for another 30-45 seconds until molten.
- Transfer the melted cheese to a food processor and blend with the egg until fully combined.
- Add the dry ingredients to the food processor and blend until thoroughly mixed.
- If the dough is very sticky, wrap it in cling film and freeze for 15 minutes.
- Preheat the oven to 400°F and prepare a cookie sheet with parchment paper or a Silpat.
- Remove the dough from the freezer, cut it into 8 pieces, and roll each piece into a ball.
- Place the dough balls on the prepared cookie sheet and flatten the bottoms slightly.
- Sprinkle with sesame seeds, poppy seeds, or dehydrated onion, pressing gently to adhere.
- Bake for approximately 13-15 minutes until browned.
