Instructions
- Preheat the oven to 350ºF (177ºC) and grease a 10-inch oven-safe skillet.
- Melt the butter in a glass measuring cup in the oven until just melted.
- Combine the dry ingredients in a large mixing bowl.
- Add ½ cup of mozzarella to the melted butter and return it to the oven until softened.
- Mix the butter/cheese mixture and eggs into the dry ingredients to form a dough.
- Roll out the dough into a rectangle shape using parchment paper.
- Brush the dough with olive oil, spread marinara sauce, and top with mozzarella and pepperoni.
- Roll up the dough carefully using the parchment paper as a guide.
- Cut the rolled dough into 8 even pieces and place them in the greased skillet.
- Sprinkle with extra mozzarella and bake for 30 minutes or until golden brown.
- Serve hot with warmed marinara for dipping.
