Ingredients

The dough

  • 4 Tbsp salted butter
  • 1 cup fine blanched almond flour
  • ½ cup chickpea flour
  • 4 tsp double acting aluminum-free baking powder
  • 1 tsp psyllium husk powder
  • ½ tsp xanthan gum
  • ½ tsp fine sea salt
  • 1 cup shredded low moisture mozzarella
  • 2 large eggs
  • Olive oil for brushing

The toppings

  • 1 cup sugar-free marinara sauce
  • 2 oz pepperoni
  • Extra for topping mozzarella

Instructions

  1. Preheat the oven to 350ºF (177ºC) and grease a 10-inch oven-safe skillet.
  2. Melt the butter in a glass measuring cup in the oven until just melted.
  3. Combine the dry ingredients in a large mixing bowl.
  4. Add ½ cup of mozzarella to the melted butter and return it to the oven until softened.
  5. Mix the butter/cheese mixture and eggs into the dry ingredients to form a dough.
  6. Roll out the dough into a rectangle shape using parchment paper.
  7. Brush the dough with olive oil, spread marinara sauce, and top with mozzarella and pepperoni.
  8. Roll up the dough carefully using the parchment paper as a guide.
  9. Cut the rolled dough into 8 even pieces and place them in the greased skillet.
  10. Sprinkle with extra mozzarella and bake for 30 minutes or until golden brown.
  11. Serve hot with warmed marinara for dipping.
