Ingredients

The pudding

  • 2 tbsp Bob's Red Mill chia seeds
  • ½ cup coconut milk (or almond milk or other nut milk)
  • 1 tbsp collagen (optional)
  • a pinch sea salt
  • ¼ tsp vanilla (optional)
  • ½ cup berries (plus more for topping)

Toppings

  • Other fresh fruit
  • Toasted coconut
  • Grain-free granola

Instructions

  1. Combine chia seeds, non-dairy milk, sea salt, collagen, and vanilla in a bowl and whisk until the chia seeds begin to expand and the mixture thickens.
  2. In a saucepan over medium heat, add the berries and cook until they break down into a sauce-like consistency.
  3. Layer the berry mixture and chia pudding in a jar, adding any additional toppings if desired.
  4. Cover and store in the fridge. Enjoy cold or heat for about 30 seconds before eating.
