Ingredients

The Sandwich

  • 1 large onion, thinly sliced
  • 2 sweet onions, sliced thin
  • 8 tablespoons butter, divided
  • 1 cup pineapple juice
  • 1 cup pineapple, diced
  • 2 teaspoons dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 12 rolls slider size
  • 12 slices leftover ham
  • 12 slices swiss cheese
  • 6-8 slices fried bacon
  • 1 teaspoon poppy seeds

Jerk BBQ Sauce

  • 1 cup BBQ sauce
  • cup pineapple juice
  • 1 tablespoon soy sauce
  • 1-2 teaspoons spicy curry powder
  • ¼ teaspoon cinnamon
  • 1 jalapeno seeded and chopped

Instructions

  1. Prepare the BBQ sauce by mixing BBQ sauce, pineapple juice, soy sauce, curry powder, cinnamon, and jalapeno; refrigerate until ready to use.
  2. In a skillet, melt 1 tablespoon of butter and cook the onions until softened, then add pineapple chunks and juice gradually until caramelized.
  3. Melt the remaining butter and whisk in the mustard and Worcestershire sauce.
  4. Line a baking dish with foil, place the bottom half of the rolls, brush with melted butter, and layer with ham, BBQ sauce, onions, cheese, and bacon.
  5. Top with the other half of the rolls, brush with butter, sprinkle poppy seeds, cover with foil, and bake for 15-20 minutes until cheese is melted.
  6. Serve warm with BBQ sauce for dipping.
