Ingredients

  • 2 ⅓ cups all purpose gluten free flour
  • 1 ½ Tablespoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • teaspoon xanthan gum
  • 2 teaspoons raw sugar or honey
  • 6 Tablespoons cold butter
  • 1 cup cold buttermilk
  • 1 large egg

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. Grate the cold butter into the flour mixture and combine gently.
  3. Make a well in the center and add the egg and buttermilk mixture.
  4. Fold the mixture together until just combined, avoiding overmixing.
  5. Place the dough on a floured surface and form it into a ball.
  6. Dust the dough with flour and roll it out into a rectangle.
  7. Cut the dough into sections, stack, and press together, then roll out again.
  8. Cut out biscuits using a biscuit cutter.
  9. Chill the biscuits in the freezer for 10 minutes while preheating the oven.
  10. Bake the biscuits in a preheated oven at 425°F for 15-20 minutes.
