Gluten Free Biscuits

Instructions
- Whisk together the dry ingredients in a large bowl.
- Grate the cold butter into the flour mixture and combine gently.
- Make a well in the mixture and whisk the egg into the buttermilk, then pour into the well.
- Fold the mixture until just combined, being careful not to overwork the dough.
- Transfer the dough to a floured surface and form it into a ball, adding more flour as needed.
- Roll the dough into a rectangle about 7 inches wide and cut it into sections, stacking and pressing them together.
- Roll the dough to about ½ inch thick and cut out biscuits with a cutter.
- Place the biscuits on a lined baking sheet and freeze for 10 minutes while preheating the oven.
- Brush the tops with buttermilk or egg and bake at 425°F for 15-20 minutes until golden.
