Ingredients

  • 2 ⅓ cups all purpose gluten free flour
  • 1 ½ tablespoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • teaspoon xanthan gum
  • 2 teaspoons raw sugar or honey
  • 6 tablespoons cold butter
  • 1 cup cold buttermilk
  • 1 large egg

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. Grate the cold butter into the flour mixture and combine gently.
  3. Make a well in the mixture and whisk the egg into the buttermilk, then pour into the well.
  4. Fold the mixture until just combined, being careful not to overwork the dough.
  5. Transfer the dough to a floured surface and form it into a ball, adding more flour as needed.
  6. Roll the dough into a rectangle about 7 inches wide and cut it into sections, stacking and pressing them together.
  7. Roll the dough to about ½ inch thick and cut out biscuits with a cutter.
  8. Place the biscuits on a lined baking sheet and freeze for 10 minutes while preheating the oven.
  9. Brush the tops with buttermilk or egg and bake at 425°F for 15-20 minutes until golden.
