Ingredients

Tempeh Bacon

  • 8 ounces tempeh
  • ¼ cup tamari
  • 2 tablespoons rice vinegar

  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • to taste freshly ground black pepper

Shiitake Bacon

  • 8 ounces shiitake mushrooms
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon tamari

Coconut Bacon

  • ¾ cup unsweetened coconut flakes
  • ¾ tablespoon tamari
  • ½ tablespoon maple syrup
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F for tempeh bacon and line a baking sheet with parchment paper.
  2. Whisk together tamari, rice vinegar, maple syrup, olive oil, cumin, smoked paprika, and black pepper in a bowl.
  3. Marinate the steamed tempeh in the mixture for 15 minutes, then layer on the baking sheet.
  4. Bake for 8 to 10 minutes until crisp and charred, then cool for 10 minutes.
  5. For shiitake bacon, preheat the oven to 300°F and line a baking sheet.
  6. Wipe mushrooms clean, slice them, and toss with olive oil and tamari, then spread on the baking sheet.
  7. Bake for 30 to 40 minutes, tossing halfway, until crispy.
  8. For coconut bacon, preheat the oven to 350°F and line a baking sheet.
  9. Toss coconut flakes with tamari, maple syrup, and smoked paprika, then spread on the baking sheet.
  10. Bake for 6 to 10 minutes until golden brown, watching carefully to avoid burning.
