Vegan Bacon

Ingredients

The tofu

  • 16 ounces firm or extra firm tofu

The marinade

  • 2 tablespoons soy sauce (low sodium preferred)
  • 2 tablespoons smoked shoyu (or regular soy sauce + liquid smoke)
  • 3 tablespoons maple syrup
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon black pepper
  • teaspoon chipotle powder (or canned)

The cooking oil

  • 1–2 tablespoons coconut oil (or other oil suitable for medium-high heat)

Instructions

  1. Preheat the oven to 350°F.
  2. Drain and slice the tofu into 1/8" thick slabs or 1-inch strips and lay them on an oiled sheet pan.
  3. Mix the soy sauce, smoked shoyu, maple syrup, smoked paprika, coriander, black pepper, and chipotle powder, then spoon half of the mixture over the tofu and bake for 15 minutes.
  4. Carefully flip the tofu and baste with the remaining marinade, then bake for an additional 15 minutes.
  5. Let the tofu cool for 15 minutes or refrigerate until ready to use.
  6. Heat a skillet and fry the tofu in oil over medium heat until crisp, about 1-2 minutes per side.
