Ingredients

Honey Goat Cheese Dressing

  • 2.5 oz fresh creamy goat cheese
  • 1 tbsp honey
  • ½ tbsp extra-virgin olive oil
  • tsp apple cider vinegar
  • 2 tsp fresh lemon juice
  • tbsp water
  • to taste kosher salt
  • to taste freshly ground black pepper

Salad

  • 6 cups mixed baby greens
  • 2 medium ripe peaches
  • 2 medium ripe plums
  • 24 walnut or pecan halves

Instructions

  1. Blend goat cheese, honey, olive oil, vinegar, lemon juice, and water until creamy, then refrigerate.
  2. Heat a grill pan over medium-high heat and lightly oil it.
  3. Grill the fruit for about 1 minute until char marks appear.
  4. Divide greens among plates, top with grilled fruit and nuts, and drizzle with dressing.
