Ingredients

The base

  • 1 cup long grain rice, rinsed until the water runs clear
  • 1⅓ cups water
  • 2 Tbsp salted butter

The vegetables

  • 8 oz fresh green beans, trimmed, rinsed, and dried
  • ¼ tsp salt
  • tsp black pepper

The protein

  • 2 eggs large eggs

The flavorings

  • 2 Tbsp cooking oil
  • 2 tsp chili crisp

Instructions

  1. Boil water in a small pot, then add rice and butter.
  2. Once boiling, cover and reduce heat to medium-low, cooking the rice without uncovering it.
  3. In another pot, soft boil the eggs for 6 minutes, then cool them under cold water.
  4. In a skillet, heat oil, add green beans, and season with salt and pepper. Let them brown on one side for about 4 to 5 minutes.
  5. Remove the skillet from heat once the green beans are browned.
  6. After the rice is done, let it sit covered for 10 minutes, then fluff it.
  7. Serve the rice in bowls, topped with green beans, chili crisp, and halved soft-boiled eggs.
