Instructions
- Start by cooking the rice as it takes the longest.
- Dice the onion and mince the garlic, then sauté them in butter until soft.
- Add the dry rice, turmeric, cumin, and cinnamon, and toast for about 3 minutes.
- Pour in the chicken broth and add the bay leaf, then bring to a boil.
- Reduce heat to low and simmer the rice for 20 minutes, then let it sit for another 20 minutes.
- While the rice is resting, prepare the sautéed spinach by sautéing minced garlic in olive oil.
- Add the spinach and cook until wilted, seasoning with salt and pepper.
- Fry the eggs to your preference.
- To serve, place 1 cup of rice in a bowl, top with ½ cup of spinach, and add a fried egg.
