Golden Rice Bowls

Ingredients

The rice

  • 2 Tbsp butter
  • 1 small yellow onion
  • 2 cloves garlic
  • 2 cups uncooked jasmine rice
  • 1 tsp turmeric
  • ½ tsp ground cumin
  • tsp cinnamon
  • 1 whole bay leaf
  • 3 cups chicken broth

The sautéed spinach

  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 16 oz bag spinach
  • to taste salt
  • to taste pepper

The eggs

  • 6 large eggs

Instructions

  1. Start by cooking the rice as it takes the longest.
  2. Dice the onion and mince the garlic, then sauté them in butter until soft.
  3. Add the dry rice, turmeric, cumin, and cinnamon, and toast for about 3 minutes.
  4. Pour in the chicken broth and add the bay leaf, then bring to a boil.
  5. Reduce heat to low and simmer the rice for 20 minutes, then let it sit for another 20 minutes.
  6. While the rice is resting, prepare the sautéed spinach by sautéing minced garlic in olive oil.
  7. Add the spinach and cook until wilted, seasoning with salt and pepper.
  8. Fry the eggs to your preference.
  9. To serve, place 1 cup of rice in a bowl, top with ½ cup of spinach, and add a fried egg.
