Everything Bagel Rice Bowl

Ingredients

The base

  • 1 cup long grain rice, rinsed until water runs clear
  • 1 ⅓ cup water
  • ½ tsp salt
  • 5 Tbsp salted butter, divided

The vegetables

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 8 oz fresh spinach

The protein

  • 2 large eggs

The seasoning

  • 1 tsp Everything Bagel seasoning plus more for garnish

Instructions

  1. Boil water in a pot and add rinsed rice, salt, and 2 tablespoons of butter.
  2. Simmer the rice uncovered until steam vents form, then cover and cook on low for 15 minutes.
  3. Let the rice rest off the heat for 10 minutes before removing the lid.
  4. In a pan, melt 2 tablespoons of butter and sauté the diced onion until translucent.
  5. Add minced garlic and cook for 1 minute, then add spinach and sauté until wilted.
  6. Make indentations in the spinach and crack eggs into them, cooking until egg whites are opaque.
  7. Fluff the rice and mix in the remaining butter and Everything Bagel seasoning.
  8. Serve the rice in bowls topped with spinach and an egg, garnished with more seasoning.
