Everything Bagel Rice Bowl

Instructions
- Boil water in a pot and add rinsed rice, salt, and 2 tablespoons of butter.
- Simmer the rice uncovered until steam vents form, then cover and cook on low for 15 minutes.
- Let the rice rest off the heat for 10 minutes before removing the lid.
- In a pan, melt 2 tablespoons of butter and sauté the diced onion until translucent.
- Add minced garlic and cook for 1 minute, then add spinach and sauté until wilted.
- Make indentations in the spinach and crack eggs into them, cooking until egg whites are opaque.
- Fluff the rice and mix in the remaining butter and Everything Bagel seasoning.
- Serve the rice in bowls topped with spinach and an egg, garnished with more seasoning.
