Ingredients

The base

  • ¾ to 1 cup gluten free oats
  • ¼ cup sliced almond
  • ½ cup coconut flour

The mix-ins

  • cup almond butter
  • 2–3 tablespoons pumpkin seeds
  • cup dried cranberries or berries
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • dash sea salt
  • ¼ cup honey or agave nectar

Instructions

  1. Combine the oats and almonds in a high-speed blender and pulse until fine-textured.
  2. In a large bowl, mix all the dry ingredients together.
  3. Add almond butter and honey to the dry mixture, then mix in vanilla.
  4. Use your hands to combine the mixture thoroughly.
  5. Roll the dough into bite-sized balls, about 2 tablespoons each.
  6. Place the balls on a parchment-covered baking sheet.
  7. Freeze or refrigerate to maintain freshness.
