Instructions
- Rice the cauliflower using a food processor until it reaches a rice-like texture.
- Prepare the remaining vegetables by cutting and slicing them as needed.
- Sauté corn, onion, garlic, and oil in a pan over medium-high heat for 2-3 minutes until fragrant.
- Add the riced cauliflower, paprika, spinach, and cream to the pan, mixing well.
- Cover and reduce heat, cooking for 5 minutes on medium-low.
- Stir in the cheese and keep cooking until melted.
- Season with salt and pepper to taste, and garnish with red pepper flakes and basil.
- Serve in bowls, optionally topped with marinara sauce and additional cheese.
