Ingredients

The base

  • ¾ lbs cauliflower
  • 1 cup chopped onion
  • 2 cups sweet corn
  • 1.5 cups grated Emmi Le Gruyère Cheese
  • 1 tsp minced garlic
  • 1 tbsp olive oil or butter
  • ½ tsp smoked paprika
  • 1 cup spinach leaves
  • ¾ cup coconut milk or cream

The garnishes and optional ingredients

  • 1 handful chopped basil
  • to taste sea salt/pepper
  • red pepper flakes to garnish
  • cup spicy marinara sauce (optional)
  • 2 tbsp coconut cream or heavy cream (optional)
  • 1 tbsp melted butter (optional)
  • 1 jalapeño sliced (optional)
  • 1 bell pepper chopped (optional)

Instructions

  1. Rice the cauliflower using a food processor until it reaches a rice-like texture.
  2. Prepare the remaining vegetables by cutting and slicing them as needed.
  3. Sauté corn, onion, garlic, and oil in a pan over medium-high heat for 2-3 minutes until fragrant.
  4. Add the riced cauliflower, paprika, spinach, and cream to the pan, mixing well.
  5. Cover and reduce heat, cooking for 5 minutes on medium-low.
  6. Stir in the cheese and keep cooking until melted.
  7. Season with salt and pepper to taste, and garnish with red pepper flakes and basil.
  8. Serve in bowls, optionally topped with marinara sauce and additional cheese.
