Creamy Cauliflower Garlic Rice

Instructions
- Cook the brown rice according to the package directions and set aside.
- In a large pot, bring the vegetable broth and water to a boil, then add the chopped cauliflower and boil until tender.
- Transfer the cooked cauliflower to a blender or food processor and puree, adding milk or extra broth for a smooth consistency. Season with salt.
- Pour the cauliflower puree over the cooked rice and mix well.
- In a nonstick skillet, melt the butter and sauté the minced garlic until fragrant.
- Add the creamy rice mixture to the skillet and stir to combine, adding the cheese on top or mixing it in until melted. Adjust seasoning with salt and pepper to taste.
