Tuna Lettuce Wrap with Avocado Yogurt Dressing

Ingredients

The wraps

  • 4 large leaves Butter or Bibb Lettuce
  • 4 oz good quality tuna in olive oil, drained
  • 1 piece heart of palm, drained and sliced
  • ¼ cup cherry tomatoes, quartered
  • ¼ cup shredded or grated carrot
  • 2 tablespoon Avocado Yogurt Dressing
  • 2 pieces thinly sliced red onion, separated into rings

The dressing

  • ½ cup 2% Greek yogurt, or dairy free version
  • ¼ small avocado
  • 3 tablespoon fresh chopped cilantro
  • ½ piece jalapeno pepper, seeds and membrane removed
  • 1 clove garlic
  • Juice from ¼ lime
  • tsp kosher salt
  • to taste freshly ground pepper
  • 1 tablespoon water, as needed

Instructions

  1. Blend all dressing ingredients until smooth, adding water if too thick.
  2. Place lettuce leaves on a plate and top each with tuna, hearts of palm, tomatoes, carrots, and red onion.
  3. Drizzle dressing over each wrap and serve immediately.
