Tuna Wrap

Ingredients

The wrap

  • 1 10" soft flour tortilla
  • ½ cup baby spinach leaves (or other leafy greens)

The filling

  • 1 5oz can chunk light tuna fish, in water, drained
  • ¼ cup plain Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp chopped walnuts
  • 2 tbsp raisins, golden or California
  • 1 tbsp capers
  • 1 tbsp chopped flat parsley
  • a pinch Himalayan salt
  • a pinch freshly ground black pepper
  • a pinch red pepper flakes (optional)

Instructions

  1. Combine tuna, yogurt, Dijon mustard, walnuts, raisins, capers, parsley, salt, pepper, and red pepper flakes in a bowl.
  2. Mix until evenly combined.
  3. Place spinach leaves in the center of the tortilla and add the tuna mixture on top.
  4. Fold the tortilla over the filling and press gently to form a roll.
  5. Tuck the ends in and roll tightly.
  6. Slice on a diagonal and serve immediately or wrap for later.
