Instructions
- Press the tofu for at least 10 minutes to remove excess water.
- Cube the tofu and whisk together the balsamic marinade ingredients.
- Marinate the tofu for at least 15 minutes.
- Preheat the oven to 375°F.
- Prepare the vegetables while the tofu marinates.
- Heat a large oven-safe skillet and add olive oil.
- Add the zucchini, tomatoes, shallot, and salt to the skillet, along with the marinated tofu.
- Sauté until the tofu is golden and vegetables are softened.
- Add garlic and sauté until aromatic.
- Deglaze the pan with the reserved marinade and add vegetable broth.
- Bring to a simmer and stir in the rinsed rice.
- Cover and bake for 25 minutes.
- Top with feta and lemon slices, then bake uncovered for an additional 10 minutes.
- Serve garnished with parsley and black pepper.
