Ingredients

Balsamic Tofu

  • 14 ounce extra firm tofu
  • ¼ cup balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • 1 teaspoon dry parsley
  • ¼ teaspoon black pepper
  • ¼ teaspoon kosher salt

Rice Bake

  • 1 medium zucchini
  • 1 pint grape tomatoes
  • 1 medium shallot
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • 1 ¾ cup vegetable broth
  • 1 ¼ cup long grain white rice
  • 4 ounces feta
  • 1 small lemon
  • fresh chopped parsley
  • to taste freshly ground black pepper

Instructions

  1. Press the tofu for at least 10 minutes to remove excess water.
  2. Cube the tofu and whisk together the balsamic marinade ingredients.
  3. Marinate the tofu for at least 15 minutes.
  4. Preheat the oven to 375°F.
  5. Prepare the vegetables while the tofu marinates.
  6. Heat a large oven-safe skillet and add olive oil.
  7. Add the zucchini, tomatoes, shallot, and salt to the skillet, along with the marinated tofu.
  8. Sauté until the tofu is golden and vegetables are softened.
  9. Add garlic and sauté until aromatic.
  10. Deglaze the pan with the reserved marinade and add vegetable broth.
  11. Bring to a simmer and stir in the rinsed rice.
  12. Cover and bake for 25 minutes.
  13. Top with feta and lemon slices, then bake uncovered for an additional 10 minutes.
  14. Serve garnished with parsley and black pepper.
