Marinated Baked Tofu

The marinade

Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Slice the tofu into 1-inch cubes.
- Mix vegetable broth and soy sauce in a bowl, then toss the tofu cubes in the marinade and let sit for at least 10 minutes.
- Remove the tofu from the marinade and pat dry with a paper towel.
- In a bag or bowl, combine the tofu with oil, corn starch, and pepper, gently tossing to coat.
- Spread the tofu in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes until golden brown, being careful not to overcook.
