Marinated Baked Tofu

Ingredients

The tofu

  • 1 block (14 ounces) extra firm tofu

The marinade

  • ½ cup vegetable broth
  • 1 tablespoon soy sauce

The coating

  • 1 tablespoon corn starch
  • 1 tablespoon canola oil
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Slice the tofu into 1-inch cubes.
  3. Mix vegetable broth and soy sauce in a bowl, then toss the tofu cubes in the marinade and let sit for at least 10 minutes.
  4. Remove the tofu from the marinade and pat dry with a paper towel.
  5. In a bag or bowl, combine the tofu with oil, corn starch, and pepper, gently tossing to coat.
  6. Spread the tofu in a single layer on the prepared baking sheet.
  7. Bake for 25-30 minutes until golden brown, being careful not to overcook.
