Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Pour 1 tablespoon of raw sugar into a shallow dish for rolling the cookies.
- In a bowl, whisk together the flours, baking soda, and salt.
- Melt the butter in a saucepan and stir in the spices, cooking until fragrant.
- Transfer the butter mixture to a bowl and let it cool slightly.
- Mix in the remaining sugar, brown sugar, egg yolk, vanilla, and molasses into the butter mixture.
- Combine the flour mixture with the wet ingredients until just combined.
- Scoop about 1 tablespoon of dough, shape it into a ball, and roll half in the raw sugar.
- Place the cookies on the baking sheet, sugar side up, leaving space between them.
- Bake for 9 to 12 minutes until the edges are set but the centers are still soft.
- Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
