Ingredients

  • 4 tablespoons raw (turbinado) sugar, divided
  • ¾ cup whole wheat pastry flour
  • cup whole wheat flour
  • ½ teaspoon baking soda
  • teaspoon salt
  • 6 tablespoons unsalted butter
  • ¾ teaspoon cinnamon
  • ¾ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • teaspoon ground allspice
  • teaspoon ground pepper
  • ¼ cup light or dark molasses
  • 3 tablespoons dark brown sugar or Muscovado sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Pour 1 tablespoon of raw sugar into a shallow dish for rolling the cookies.
  3. In a bowl, whisk together the flours, baking soda, and salt.
  4. Melt the butter in a saucepan and stir in the spices, cooking until fragrant.
  5. Transfer the butter mixture to a bowl and let it cool slightly.
  6. Mix in the remaining sugar, brown sugar, egg yolk, vanilla, and molasses into the butter mixture.
  7. Combine the flour mixture with the wet ingredients until just combined.
  8. Scoop about 1 tablespoon of dough, shape it into a ball, and roll half in the raw sugar.
  9. Place the cookies on the baking sheet, sugar side up, leaving space between them.
  10. Bake for 9 to 12 minutes until the edges are set but the centers are still soft.
  11. Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
