Ingredients

The dough

  • 1 cup unsalted butter, room temperature
  • cup granulated sugar
  • cup packed brown sugar
  • 1 extra large egg
  • cup dark molasses
  • 1 tsp vanilla
  • 3 cups all-purpose flour
  • 3 tsp baking soda
  • 3 tsp ground ginger
  • tsp ground cinnamon
  • 1 tsp cardamom
  • ½ tsp black pepper
  • ½ tsp ground cloves
  • ½ tsp nutmeg
  • ¾ tsp salt

For rolling

  • to taste coarse sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sugars together until light and fluffy.
  3. Add the egg, molasses, and vanilla to the mixture and whip until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and spices.
  5. Gradually add the flour mixture to the butter mixture and mix well.
  6. Refrigerate the dough for 1-2 hours or overnight.
  7. Roll the dough into walnut-sized balls and coat in coarse sugar.
  8. Place the balls on a parchment-lined sheet pan, spaced 3 inches apart.
  9. Bake for 8-10 minutes, checking at 8-9 minutes and adjusting if necessary.
  10. Let the cookies stand for 5 minutes before transferring to a wire rack to cool.
