Instructions
- Preheat the oven to 350°F.
- Cream the butter and sugars together until light and fluffy.
- Add the egg, molasses, and vanilla to the mixture and whip until combined.
- In a separate bowl, whisk together the flour, baking soda, and spices.
- Gradually add the flour mixture to the butter mixture and mix well.
- Refrigerate the dough for 1-2 hours or overnight.
- Roll the dough into walnut-sized balls and coat in coarse sugar.
- Place the balls on a parchment-lined sheet pan, spaced 3 inches apart.
- Bake for 8-10 minutes, checking at 8-9 minutes and adjusting if necessary.
- Let the cookies stand for 5 minutes before transferring to a wire rack to cool.
