Ingredients

The meatballs

  • 1 lb ground chicken
  • 1 unit egg
  • ½ cup almond flour
  • ½ cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

The sauce and cheese

  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine the ground chicken, egg, almond flour, parmesan cheese, garlic, onion powder, salt, and pepper, then mix by hand.
  3. Roll the mixture into meatballs.
  4. Pour 1 cup of marinara sauce into the bottom of a baking dish.
  5. Place the meatballs in the dish on top of the sauce, then pour the remaining 1 cup of marinara sauce over the meatballs.
  6. Sprinkle the mozzarella cheese and the remaining parmesan cheese on top.
  7. Bake for 25-30 minutes or until the internal temperature of the meatballs reaches 165°F.
