Lemon Chicken Marinade

Ingredients

  • 1 lb. boneless skinless chicken breasts, thighs, or legs
  • ½ lemon zest
  • 1 lemon juice
  • 2 tablespoons avocado oil or olive oil
  • 1 clove garlic, minced
  • 2 tablespoons minced fresh herbs of choice
  • ½–1 teaspoon fine salt
  • ¼ teaspoon black pepper

Instructions

  1. Place the chicken in a large bowl or zip-top plastic bag.
  2. In a small bowl, whisk together the lemon zest, lemon juice, oil, garlic, herbs, salt, and pepper.
  3. Pour the marinade over the chicken and toss to coat evenly.
  4. Marinate the chicken in the refrigerator for at least 4 hours or up to 2-3 days, or freeze for up to 2 months.
