Ingredients

The brownies

  • 1 ½ teaspoons ground flax
  • 1 tablespoon water
  • ¼ teaspoon fine sea salt
  • scant ⅛ teaspoon baking soda
  • 1 tablespoon plus 1 teaspoon pure maple syrup
  • ½ teaspoon pure vanilla extract
  • 2 teaspoons arrowroot starch
  • 2 tablespoons plus 2 teaspoons unsweetened cocoa powder
  • 2 tablespoons natural cane sugar
  • ¼ cup natural smooth almond butter
  • 2 tablespoons chopped dark chocolate or chocolate chips

The Magic No-Cook Caramel

  • 1 tablespoon plus 1 teaspoon coconut oil, melted
  • 2 tablespoons pure maple syrup
  • 1 tablespoon raw cashew butter
  • 1 teaspoon coconut nectar or pure maple syrup
  • a good pinch fine sea salt

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a ramekin.
  2. In a bowl, mix ground flax and water and let sit.
  3. Add salt, baking soda, maple syrup, vanilla, and arrowroot starch to the flax mixture and whisk until smooth.
  4. Stir in cocoa powder and sugar until combined.
  5. Mix in almond butter and chopped chocolate until fully incorporated.
  6. Scoop the dough into the prepared ramekin(s) and smooth the top.
  7. Bake for 22 to 25 minutes until risen but still soft in the center.
  8. Cool the brownies for 25 to 30 minutes.
  9. In the meantime, prepare the caramel by blending all ingredients until smooth.
  10. Serve the brownie with caramel sauce and optional toppings like ice cream or walnuts.
