Almond Flour Brownies

Ingredients

  • 1 cup blanched almond flour
  • 1 cup coconut sugar
  • cup raw cacao powder
  • 2 large eggs
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • cup mini chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line an 8-inch square pan with parchment paper.
  2. In a large bowl, combine the almond flour, coconut sugar, cacao powder, baking soda, and salt, and whisk well.
  3. Add the eggs, melted coconut oil, and vanilla extract to the dry ingredients and mix until a thick batter forms.
  4. Reserve 2 tablespoons of chocolate chips and fold the rest into the batter.
  5. Transfer the batter to the prepared pan and press it evenly into the bottom.
  6. Sprinkle the reserved chocolate chips on top.
  7. Bake for about 25 minutes until the edges look dry and the center doesn't jiggle too much.
  8. Let the brownies cool for at least 1 hour before slicing into 16 squares.
