Gluten-Free Spritz Cookies

Ingredients

  • 1 cup butter
  • ¾ cup sugar
  • 2 ¼ cups gluten-free flour blend
  • ½ teaspoon salt
  • 1 large egg
  • 2 teaspoons vanilla extract
  • optional food coloring

Instructions

  1. Cream together the butter and sugar in a stand mixer.
  2. Add the flour, salt, egg, and vanilla extract, and beat until just combined.
  3. If using food coloring, add it and beat until incorporated.
  4. Refrigerate the dough for about 1 hour.
  5. Preheat the oven to 400°F.
  6. Fill your cookie press with about ¼ of the dough and press the cookies onto an ungreased cookie sheet.
  7. Bake for 6 to 8 minutes until the cookies are set but not browned.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
